Farli cuocere in padella a fiamma bassa senza acqua ma solo con un goccio di olio. Quando sono cotti, frullarli. Rimetterli in padella col sale e continuare la cottura finché si addensa maggiormente. <br />A questo punto si può conservare in un vasetto di vetro in frigo oppure in freezer, mettendo prima il composto su di un vassoio in frigo e poi tagliarlo in cubetti e passarlo in congelatore.<br />Ecco fatto! Frullare la quantità necessaria con un frullino ad immersione. A parte cuocere le tagliatelle, meglio le ruvide. Contemporaneamente soffriggere un trito grossolano di sedano carota e cipolla. A fine cottura aggiungere poca pancetta tagliata a dadini e rosolarla leggermente. Mettere da parte questo trito colorato. A questo punto scolare le tagliatelle e farle mantecare nella padella con la crema di cime di rapa. Se troppo densa, aggiungere un po’ di acqua di cottura della verdura. <br />Impiattare e decorare con la dadolata messa da parte e la pancetta! Condire con olio, sale, formaggio e pomodorini. In una teglia da forno mettere sul fondo un goccio d’olio, qualche cucchiaio di salsa, la verza in parte condita. Aggiungere i pomodori tagliati, la pancetta, il formaggio e un po’ di scamorza a cubetti. Prima di Formare il secondo strato aggiungere una manciata di riso ben lavato.<br />Formare il secondo strato aggiungendo gli stessi ingredienti e chiudendo con delle fette grandi di scamorza. <br />Prima di cuocere in forno a 180 gradi per 30/40 min, versare due tazze di brodo vegetale caldo. Coprire e quindi infornare. Ancora l’altra sfoglia, e continuare con gli stessi ingredienti. Far sciogliere la stecca a bagno maria, versare le mandorle tostate, mescolare e con un cucchiaino versarne una piccola quantità nei pirottini. Lasciar asciugare non in frigo ma a temperatura ambiente per 3 ore circa. Eccole pronte! Dopo friggerle in olio di semi e metterle su carta assorbente. <br />A parte riscaldare il vincotto in un tegamino e passare le cartellate per insaporirle. Le ho cucinate per qualche minuto nella friggitrice ad aria con un filo d’olio. <br />Ho cosparso la pirofila da forno col sugo, poi ho adagiato i nidi di tagliatelle all’uovo scottate un attimo in acqua salata. Successivamente ho condito con stracciatella, altro sugo e formaggio grattugiato. Il sugo di pomodoro dev’essere diluito con acqua calda per favorire la cottura della pasta. Aggiungere lentamente la farina con l’acqua e l’olio ed il sale. Formare un impasto liscio ed omogeneo. Far lievitare due ore nel forno spento con la lucina accesa. Dopo di che stendere l’impasto e farcirlo secondo i propri gusti. Io ho farcito uno con bietole, mortadella e scamorza, l’altro con prosciutto cotto scamorza e pomodoro pelato. Riempire il forellino con poca marmellata. Cottura 180 gradi per 15 min. <br />Una volta sfornati, aggiungere altra marmellata e volendo una spolverata di zucchero a velo. Aggiungere due terzi di acqua impastando. Versare la restante acqua nella quale è stato sciolto il lievito. Dopo aver formato il panetto, aggiungere l’olio poco per volta. Mettere a lievitare l’impasto in una ciotola leggermente oliata, in luogo tiepido, per trenta minuti. Fare delle pieghe e posizionare l’impasto ottenuto nella teglia ta forno, anch’essa unta. Far riposare un’ora e mezza. A questo punto stendere l’impasto con le dita e condire a piacere. Io ho preferito pomodori, origano, sale ed olio.
